K. P. of the Year

I was wondering about how chefs get so much acclaim and waiters, housekeepers and K.P’s don’t, maybe that’s why a lot of these guys have no ambition and good restaurant managers jobs are there for the taking or head housekeepers jobs. And K.P’s let’s face it, it’s no rocket science but if you can knock your pan in washing pots and make things clean and tidy, you can be a hero; and lots of people just aren’t capable of that. These guys should be credited. The chefs get awards, the waiter gets cre… Continue

Food review for Windows Restaurant in Sunday Herald

Restaurant review by Joanna Blythman Windows Carlton George Hotel 44 West George St Glasgow 0141 354 5070 Lunch £12.50/£15.50 Dinner £25-32 Food rating 8.5/10 IT'S EASY to miss the Carlton George Hotel, just along from Glasgow's Queen Street Station. A tall thin building with a dark, nondescript reception, and dated, anodyne middle-range hotel decor, you would never think that it houses one of the most interesting eating spaces in Glasgow. Up on a seventh-floor eyrie, it has Windows, said to… Continue

CooksQuotes

One of the very nicest things about life is the way we must regularly stop whatever it is we are doing and devote our attention to eating. ~Luciano Pavarotti and William Wright, Pavarotti, My Own Story

When you cook it should be an act of love. To put a frozen bag in the microwave for your child is an act of hate.
Raymond Blanc

A lobster is more beautiful to me than most woman are.

Each of the 10 courses was served with a special accompanying wine. Following the tenth course, fresh fruits and cheeses were available followed by coffee and cigars accompanied by port and, if desired, distilled spirits

Jamie Oliver

"A big bowl of spaghetti chased with rice pudding"

Mario Batali

"I would have eight or ten courses of magnificent seafood, pasta and vegetables (including raw radishes with good oil and salt). This would all be washed down with a sea of icy limoncello. REM would play live with U2, and John McLaughlin would play acoustic with Paco de Lucia."

Alain Ducasse

I would begin with a [the Sicilian specialty] caponata...I would then have roasted quails in a Madiran wine sauce...Then would come smooth celeriac (celery root) purée with nutmeg, whose delicate lightness would pair marvelously with these small birds. I would finish with "melt-in-your mouth apple slices."

Eric Ripert

The French chef would choose "A simple dish, a slice of toasted country bread, some olive oil, shaved black truffle, rock salt and black pepper." He would prepare the meal himself, dine under a "very big oak tree or banyan tree" and sip red bordeaux.

A murderer from Texas ordered twenty-four tacos for his last meal---and that was just the appetizer! A Maryland man wanted nothing but a cup of coffee prior to his lethal injection, while a killer from Oklahoma requested SpaghettiOs and was enraged when he didn't get them!

The Word "Salary" Comes From "Salt!"
Salt, our oldest preservative, was extremely rare in the past. So rare, in fact, that it was often used as pay.
In ancient Rome, soldiers were paid in salt; a salarium.
